Ingredients

1 1/4 cup of sugar, 1/2 cup of chopped nuts, 1 tsp of ground cinnamon, 1/2 cup of softened butter, 2 eggs, 1 cup of mashed bananas, 1/2 cup of sour cream, 1/2 tsp of vanilla extract, 2 cups of flour, 1 tsp of baking powder, 1tsp of baking soda and 1/4 tsp of salt.

Preparation

First Preheat oven to 350º

The baking time for this coffee cake recipe is approximately 45 minutes.

Mix together sugar, nuts and cinnamon. Stir together 1/4 cup sugar, pecans, & cinnamon; scatter ½ mixture in a well-greased pan. Beat butter until creamy. Slowly add remaining 1 cup sugar, beat 5 to 7 minutes until light. Add eggs, 1 at a time, beating just until yellow disappears. Add banana, sour cream and vanilla extract. Beat at low speed just until blended. In another bowl, mix flour, powder, soda and salt. Sprinkle with remaining nut mixture. Top with remaining batter. Bake until a wooden pick comes out clean.
